I got a three-stone set from LL Bean many years ago, and it still covers 98% of my sharpening needs. My kitchen quick-touchup sharpener is a "steel" (long steel stick with a handle) that I gave my Mother years ago. And for winter evenings when I am REALLY BORED, I got an Arkansas super fine stone to give an extra degree of sharpness to whatever blade is closest to my chair.
And if the above stuff doesn't do the job, I give my youngest a fiver :) and he uses a diamond-super-deluxe gizmo I gave him some time ago.

I have a 30 year old Field Diamond-Lap I bought new and still use all the time. I finish off on a Carberundum stone I've had since I was 12 or so. I also use the bottoms of the various corckery in the kitchen cabinets... :wink: :wink: :wink: :shock:

I usually use a plain ol' Tennessee stone. To polish up the edge to razor sharpness, I use Flitz and a piece of plywood. Scary sharp!

matrix123, Thank you for the link. I watched the "how to sharpen" kitchen knives video.

I will order the set of diamond whetstones this spring. A diamond steel has been of great help to me when I have been too busy carving beef for a local hotel to go in the back to restore my edge. I did not know about diamond whetstones until 10 minutes ago, although I have been a cook for 30 years.

Have a 1" Belt Sander and it does a great job. Surgical Sharpe Leather Belt to finish.
