Depends on what I'm doing. Folding for general use to tote around in the pocket and perform general cutting chores.

Everday carrying is a Swiss army spartan. Not real heavy and cheap enough to lose one every now and again...not that any of us have ever lost a knife...

I have a couple of Benchmade folders that get carried on occasion and a whole shoebox full of knives that I just kinda collect. Some CaseXX ,some Spydercos, and a variety of odds and ends and a Buck 110 because everyone has to have at least one depsite the fact they're kinda big for what they are.

I do have some fixed blades that I like for field dressing although I'm getting more adept at using a smaller knife in butchering big game.
I really like the Grohmann #5 which is about as big as a knife gets before I think it feels unwieldy. Paired with a Gransfor Hatchet it can reduce a carribou or moose to manageble chunks PDQ.I also have a real affinity for the Bark River Mini Canadian line. I usually keep the fixed blades in the truck, pack or ATV and I genuinely detest wearing a fixed blade on a belt.

More important to me is blade shape and I have a strong preference for the elliptical blade shape (ie. Grohmann again) for working with game.

i like the classic old timer 5 1/2 " belt knife for general gutting and skinning and i used a single blade folding old timer to bone out most of our deer ,,for bigger thicker meat critters i use my old 2 blade western

A Buck "Ranger" lockback handles about 99% of my needs (it's a smaller version of the original Buck Folding Hunter).

However, I also carry my old Puma White Hunter (I bought it when I was a kid and thought a bigger knife must be a better knife) to split the pelvis and to whack down a sapling for a drag rope handle.

Ive been carrying a couple of Kershaw knives for about 15 yrs. I generally have a folder on my belt that has a 4'' blade. In my pack, will be my fixed blade. If ya'll haven't had the pleasure of trying a Kershaw, you oughta try one sometime. These things are sharp from the factory and hold an edge pretty good. I sharpened both before deer season and have gutted and skinned 7 deer with them this year. THey'll still shave the hair off your arm! Of course I leave the bones to the saw and don't have a habit of dropping them on the ground. Don't know why,but I've been known to loan a rifle to someone, but my knives stay with me and no one else!

I have a couple of knives I use depending on the circumstances.
In fixed blades I have an old Bowie knife I use for some camp chores such as making kindling and more often for entertainment by throwing. It is well balanced for that purpose and works better than the lighter "Arkansas Toothpick" I also use for throwing. Next in size is a G-96 Titan which is a knock off of the 6" Buck knife. I've had it since the mid-1970s and it goes with me whenever I hit the real boondocks. It may be a bit uncomfortable to wear on the belt but a fixed blade is much more durable when making "stickies" (small kindling used to start fires, especially when raining or snowing and everything else is wet) and I find it makes a better substitute for a fillet knife. It has been to the Arctic Circle and Hudson's Bay a couple of times as well as to many more mundane places.
The fixed blade that goes everywhere with me is a 2.5" bladed Kabar TDI that sits in its sheath behind my belt. It is strictly a last ditch fighting knife and with its angled/hooked grip makes for one mighty fast to apply close range weapon.
Folding knives are also fairly few in number. I carry my most frequently used keys on a MiniMag flashlight but the set of less frequently carried keys are kept on a Swiss Army knife knock off. It is a very well made tool and has endured 12+ years of hard use from me. I expect it to last many more years. Next is a 3.5" Buck folder (110?) that fits in a single 45 ACP magazine case. One sits on my duty belt and another takes turns with a Gerber Gator at being carried in the field. These two handle most of my field care for game of all types, occasionally the G96 is used.
Beyond that I have several Spydercos that are carried on now and then. I do not care for them all that much as they are light and too thin for much serious use but they are nice in that these features also make carrying them handy. They are my general chore knives and are the ones I wouldn't get too upset over if something happened to them.
My favorite knife, if one could call it that, is a WWI bayonet off an '03 Springfield. I use it to scrape the fat off animal pelts and it works extremely well for that, better than about anything else ever made. I've had others eye it covetously and with sin in their hearts and for that reason I carry a gun.

I don't go anywhere without a folder in my pocket. The one I've been carrying for quite a few years now is a Benchmade 440 (First Production Run 315/1000). Love it. I used to carry a 942, but I leave that in my desk drawer at work. It's kinda handy around the office.
I have several fixed blades that I use fairly regularly. My usual general-purpose outdoor knife is a Benchmade 180 Outbounder, with a custom Kydex sheath. It's just the right size, and feels great in the hand. I keep a short Ka-Bar in my truck. I ground off the back end of the guard and reblued it, which greatly enhances its handiness for a camp knife. When I'm out camping or doing yard work, I keep a huge kukri handy. I had it shipped in from Nepal several years ago, and nothing else I've ever had can chop and take abuse like this thing. Great for gathering and preparing firewood, among other things. Most of the people I have let play with it have gone out and bought one. The shipping from Nepal is a real b!tch, FYI.

I've been a big knife guy since I was a kid. I've got a pretty decent collection, but these are the only ones I actually use on a regular basis.

Folding for about any chore. Carry a folding Mini Trapper in my pocket all of the time, but when Butchering Game, use a Folding Hunter, Old Shrade, also have a Remington, Case. Tree Brand Boker and a German Eye, in folding Hunters.

Carry a folding each day, for general work and some specialized jobs, like a fixed. Really like the Old Timer Sharp Finger for fixed and the Trapper in folding.

I carry a small buck folder daily and a larger version with a serated blade when I'm not at work. A Buck 110 is used for gutting or breasting.

I recently bought an Emerson A100 plain blade and while I mostly use it for cutting stuff at work I don't doubt for a second that it would work cutting people too.It's a totally solid folding knife that so far has held a good edge.Be forewarned though it's rather pricey at $130. So far it's worth every penny.

I usually carry a Gerber folder in my pocket, but for dressing and skinning I use a fixed Cold Steel Master Hunter. Extremely tough and sharp knife. I got tired of cleaning blood and hair out of the folder.
