Neat thing..... If you ever have a craving for rabbit and you don't have time to go out and shoot one yourself, or your butcher doesn't keep em around. Goto PETCO turns out they sell live rabbit cheaper than butchered rabbit. I highly recommend this for those who like eating rabbit. Not only is the meat fresh, but they tend to be loaded with more fat because of thier caged lifestyle. Stay away from the floppy eared rabbits, they cost to much to eat. And don't let your children name any of em, cause once they have a name you can't eat em :(

Cook,

My wife is from northern Italy. The family rabbit recipe goes like this.

After church on Sunday, brown rabbit pieces in olive oil and onion.
Simmer all after afternoon in the spaghetti sauce. Red sauce, not white.
Serve with polenta and red wine.

Simple and delicious.

Its Grits...Johnny cake...corn meal mush...mealie-meal...posha...tsadsa...and so on.

It is a cake of corn meal that you cut a slice out of and cover with sauce or bacalau (stewed dried, salted codfish). Polenta is a great base for many concoctions. :D
